I think truffles have to be the single most amazing category of chocolates that exist. First there's the outer layer, glossy and round with maybe a drizzle or dragée. Then, because that's clearly not decadent enough, there's the intoxicating filling inside, maybe a fluffy buttercream or dense ganache. Then there are the points where the two parts combine for a tantalizing tastebud treat that only a truffle can provide, and oh..... I think I need one, stat.
